I love showing up to holiday's and summer BBQ's with a unique dessert- and it is no secret that I looooove pie. I decided to one-up my American Flag Pie from last summer with PIE POPS. Mini Pie's on a stick, perfect for watching the fireworks, holding in one hand with a cider or sparkler in the other, for running through sprinklers with, and for watching the sunset on the rocks with. Ingredients;
-Pie Crust, 
I bought two boxes (four sheets) of pre-made organic pie crust.
-Blueberry Pie Filling
-Cherry Pie Filling
I bought a can of each, both organic with minimal ingredients and no HFCS.
-Marshmallows
-60% Dark Chocolate
-1 Egg
-Raw Sugar
-Flour
-Oven Safe Popsicle Sticks


Recipe;
-Preheat oven to 400 F.
-Line a baking sheet with tinfoil or parchment paper.
-Roll out pie crust sheet.
-Cut circles using a round cookie cutter or the lid of a mason jar.
-Place circles on the sheet and press the sticks into them.
-I was able to fit 8 circles + their sticks on a single sheet.
-Add the filling.
Spoon the blueberry and cherry.
-Use half of a marshmallow + broken up dark chocolate.
-Whisk the egg to make an egg wash.
-Brush the edges of each circle with the egg wash.
-For the S'mores once I just sliced a + pattern into the top.
-For Blueberry I used a mini star cutter.
-And for Cherry I made a lattice pattern.
-Press down the edges with a fork.
-Brush the tops with egg wash.
-Sprinkle with raw sugar.
-Bake for 10 minutes or until golden brown.
-Let cool & enjoy!
-Tip; these taste best in a gingham lined basket- ha!
